I have made these pancakes for years now. Finnegan is a pancake lover and has requested them for breakfast for years. Since I like to freeze things to make my life easier, these work out perfectly. I have made them in a dry mix form for camping for pancake dippers as well. It is easy to make it into a dry mix, which I will post seperately with the pancake dipper recipe.
Old Fashioned Pancakes
1 1/2 cup All purpose flour
3 1/2 tsp baking powder
1 tsp kosher salt
1 1/4 cup 2% milk
3 tbsp olive oil or unsweetened applesauce or nonfat Greek Yogurt
Mix all dry ingredients together. Measure wet ingredients and stir in. You can choose if you would like to use oil, applesauce or yogurt for the fat. Measure 1/4 cup per pancake. Makes 16 pancakes for 3 points for two pancakes.
