1 lb cherries, pitted
1/2 cup sugar
1/2 cup water
2 tsp lemon juice
1 stick cinnamon
pinch of nutmeg
1 tsp vanilla extract
1 cup brandy
Wash and pit cherries. You could use frozen cherries as well. Boil all ingredients except for the cherries and brandy. Reduce heat to medium. Add cherries and simmer 5 minutes. Remove from heat and add brandy. Tranfer to jars. Refrigerate. Ready to eat in 2 weeks.
I use the cherries in an Old Fashioned and in my sparkling water. I have also used them to top cheesecakes. They are delicious.
