This is a great dressing for kale or mixed salads.

Ingredients
1/4 cup olive oil
2 tbsp red wine vinegar
1 tbsp dijon mustard (or any mustard you prefer)
1 tbsp lemon juice, fresh
1 tbsp maple syrup
1/2 tsp kosher salt
1/2 tsp fresh ground pepper

Pour ingredients into a salad shaker or glass jar with a tight fitting top. Shake to emulsify and serve.
